Oatmeal Carrot Muffins

 This is an easy to make anytime snack.Carrots make it more flavorsome and healthy.

 

You need:

Muffins 
2 cups              All Purpose flour
1 cup               Instant Oats powdered coarsely
1 tsp                Baking powder
1/2 tsp             Baking soda
1/2 tsp             Salt
1 cup               Powdered sugar
1 tsp                Cinnamon
2 nos               Large eggs
1 cup               Grated carrot
1/2 cup            Sunflower/Canola oil
1 1/2 cup         Buttermilk (Prepare by mixing 2/3 parts yogurt with 1/2 parts milk )
1 tsp                Vanilla Essence
1/2 cup            Black raisins ( soaked in water for half an hour)

Oats Frosting
1 tbsp              Unsalted Butter
1 tbsp              Powdered Sugar
1 1/2 tbsp        Instant Oats
Mix the Butter,sugar and Oats with hands and keep it for chilling for an hour.

The general rule I follow while making muffins is prepare the wet ingredients , prepare the dry ingredients and then mix the two.Muffins do not require the eggs to be beaten a lot and the mixture to sit for long.
So before mixing,preheat the oven to 180 deg C.
In a large bowl,sieve flour, baking powder and baking soda.Add the powdered oats,salt,sugar,cinnamon,raisins.Mix well and keep aside
In another bowl,beat the eggs slightly.Add the essence,oil and buttermilk.
Mix the wet mixture into the dry slowly mixing the two.Avoid any lumps.The mixture should be of slightly flowing consistency.If you its not enough,add some buttermilk or milk and adjust.

Fill the paper cups 2/3rd.Sprinkle the Oats frosting.Bake for 180 deg C for 25-30 mins. Check with a knife if done.
