My Vanilla Cupcake

I am more a fan of muffins than cupcakes.The reason being muffins are more healthier without any butter or AP flour.I normally make muffins using wheat flour and oats,so one can gorge on them without any guilt.
As for cupcakes,if its not made of butter and flour,it just does not qualify to be one!
So after a lot of experiments,reading numerous recipes online,books and my mom's recipe collection,I came down to one recipe that's tasty,fluffy,moist and a favorite with my family.And the best thing is I used oil and very little butter. Here's the recipe of my gorgeous vanilla cupcake.

You need:
1 3/4th cup         All purpose flour
1 tsp                   baking powder
1/2 tsp                baking soda
1/2 tsp                salt ( i did not use as my butter was salted)
1 cup                  white granulated sugar
2 nos                  large eggs 
2 tsp                   vanilla essence
2 tbsp                 sour yogurt
2 tbsp                 sunflower oil
2 tbsp                 low cholesterol salted table butter spread ( I used Nutralite)
1/2 cup               cold milk



                       
1. Mix AP flour,baking powder,baking soda,salt(if using) and sieve it to a large bowl.
2. Rub in the butter spread to the flour mixture and mix.It will result in a crumbled form.
3. Beat the eggs well and add the sugar into it.Add 1tsp vanilla essence to this mixture.
4. Add yogurt and oil to the egg and sugar mixture and keep aside
5. Now add this mixture to the flour mixture and keep mixing well with a large spatula while adding milk little by little.
6. The batter will be runny.Add 1tsp vanilla essence,mix and let it sit while the oven is preheated at 180 deg C.
7. Fill in the cupcakes by quarter in the molds and  bake at 180 deg C for 20-25 min.
To test if done,poke the cake with a clean knife and see if it comes out clean.Else bake for another 5-10 min.
8. Enjoy the cupcakes once cooled with or without any frosting.
